Ingredients:
Carrots (chopped) 2 cups
Spring onions (chopped) 2 cups
Beef stock 4 cups
Beet (chopped) 2 cups
Cabbage (chopped) 2 cup
Black pepper (crushed) ¼ teaspoon
Salt ½ teaspoon
Sour cream as required
Method:
Put tomatoes in a bowl and soak them in some boil water for 5 minutes. The skin will loosen and slip off very easily then. Scoop out the inner part and chopped them harshly. Now place the tomatoes, spring onion, cucumber, garlic, and chopped pepper in blender. Now blend the mixture. Then add black pepper, vinegar, salt and thyme/basil for seasoning and blend until the mixture get smooth.
Take out that soup in a bowl and stir in a little cold water to make it thin slightly. Cover the bowl with foil and let it chill thoroughly.
Take out when chilled and garnish it with croutons of bread, egg (sliced) and pouring in olive oil on top. Sprinkle some parsley or fresh coriander.
