Borscht (a Russian soup)

Ingredients:

Tomatoes                                             1/2 kg
Carrots (chopped)                                2 cups
Spring onions (chopped)                     2 cups  
Beef stock                                               4 cups
Beet (chopped)                                      2 cups
Cabbage (chopped)                               2 cup
Black pepper (crushed)                        ¼ teaspoon
Salt                                                           ½ teaspoon
Sour cream                                             as required

Method:

In a large pan, combine the beef stock, beets, carrots and onion and let it boil. Reduce the heat, cover and let it cook for 30 minutes.
Add tomatoes and cabbage after that and cover. Cook until the cabbage is tendered. Season it with salt, pepper.
Take out in a serving bowl and garnish it with sour cream and fresh coriander leaves.
A really healthy diet for diet conscious people… J
